Why PNG wins with documents
JPG compression is designed for continuous tone: photographs with smooth gradients. A document is the opposite — pure black on pure white, with an abrupt transition at every letter.
In that context JPG produces grey halos around the text that become very visible when you zoom in. PNG stores every pixel exactly and the text stays clean.
What survives and what does not
Layout survives completely: typefaces, columns, tables, images and backgrounds are drawn exactly as you see them in the reader.
What is lost is the text layer. After converting you can no longer select, search or copy content, because it is all pixels. If you need the text, use the PDF to Word tool.
